I made this soup last night and I was quite disappointed in it. It called for winter squash and I had yellow squash at home when I got this recipie emailed to me. It also calls for curry and onions. I think the soup could be better if I cut the amount of curry in half and omit the onions. Thankfully, I knew that it would be too strong for Andrina so she didn't have any of it. Next time I'm going to do that and use pumpking instead of squash. I think that will taste much better.Friday, October 24, 2008

By yellow squash do you mean yellow zucchini squash? Is that what you used? The long stuff? If so, it's not going to taste right at all. The squash they call for is a winter squash which has a completely different taste than "summer" or zucchini (green or yellow) squash. Curry and winter squash is a really common combination. You gotta know if you like curry. Now you know you do-but maybe in smaller doses. I think the biggest problem though was you used the wrong squash. Keep trying!! :)
Yep, I know. I used yellow zucchini or yellow squash. I looked them up and I learned that I had a summer squash as opposed to a winter one. But I made it because Tom bought yellow squash and then I got the recipie so it was a way to use the yellow squash. I'm still going to make it with pumpkin instead next time!
yeah, I was thinking more about it and pumpkin would be better because it's sweeter and the curry would probably bring out that sweetness.
