Fire Roasted Tomatoes

I've said it before. I don't cook that much. Sometimes I get the urge or sometimes I find a recipe for something I really want to try. I recently bought a binder for holding all the clipped and printed recipes I've collected over the years. I came across this recipe for Fire Roasted Tomatoes while organizing it and it sounded so yummy and simple to make that I had to make this one.

It was very, very good. So fresh and yummy and simple to make. I didn't have to spend hours in the kitchen to make this recipe, which makes it a keeper! I don't think I'll be able to use pasta sauce from a jar the next time I make tortellini.

YUM! Of course you need to pass this one on to me! And hopefully it will be a warmer summer than last year and we will have ample tomatoes!
